This particular coffee from producer Jose Edin Ramirez brings a lovely fruit forward cup with subtle sugar undertones and a very clean finish. Until recently, the Typica variety was the only coffee Jose grew on his farm. Typica is renowned as one of the most traditional varieties in the world. Low yielding and susceptible to disease, it is always a privilege to have this on our offering.

About

Jose Edin Ramirez is a third generation coffee farmer who has been cultivating coffee since 2008. He owns Mi Teroso, a 4-hectare farm with half of it dedicated to coffee growing. Jose learned about coffee at a young age from his father, who involved him in his work from an early age. Jose made the transition to producing specialty coffee, which has been meaningful work for him and his family. With support from experts in growing specialty coffee, he is now cultivating very high quality coffees. Typica coffee is low yielding and susceptible to disease, but when grown with care can produce brilliant coffee. More recently, Jose has started to plant exotic varieties such as Gesha, and he is looking forward to being able to offer his coffee to more specialised markets.

For this particular lot of coffee, the ripest cherries were carefully selected, then placed in water tanks to float any defect cherries. They were then de-pulped and fermented for 24 hours with the mucilage attached, before being washed. The coffee was then placed in solar dryers for around 20 days until ideal moisture levels were achieved.

The variety

The history of Typica can be traced back to southwestern Ethiopia, the birthplace of coffee. The seeds that were sent to India and onto Java in Indonesia are what we know now as the Typica variety. In 1706, a single Typica coffee plant was taken from Java to Amsterdam and planted in the Botanical Gardens, and made its way to Honduras in the late eighteenth century. 

Typica is known as one of the most traditional coffee varieties in the world. Though it is low-yielding and susceptible to disease, Typica coffee produces consistently an exceptional quality cup.
