About

This coffee is produced by selected farms in Popayan region of Colombia. Coffee is brought from growers in dry parchment, it is later milled at Popayan and transported to Caldas to be decaffeinated. The sugarcane decaffeination process in unique; the caffeine is extracted from the bean using sugar cane and water which enhances sweetness, while maintaining coffee attributes. This technique was developed in Colombia.

Popayán is located in the department of Cauca at 1.700 m.a.s.l. The regions topography is perfect to grow exceptional coffee!

The so-called Meseta de Popayan is sheltered by the Andes mountain range which helps generate homogeneous climatic and altitudinal characteristics. The result is a balanced cup profile with floral and caramel notes.

Approximately 65 growers contribute to this regional coffee; our green bean suppliers Cofinet have a long-standing relationship with these growers and the program they are part of. This program encourages farmers to focus on quality, based on quality assessment up to 20% premiums above the market price are paid.

About the Sugarcane Decaffeination Process

Sugarcane decaffeination utilises a naturally occurring compound, ethyl acetate (EA) to decaffeinate coffee. The EA process is relatively simple. The coffee beans are moistened with water and EA is circulated throughout. The EA binds with the caffeine in the bean and extracts the caffeine while leaving most of the other flavour compounds. After the desired caffeine level is reached, the EA residue on the beans is removed by steaming them. Sugarcane Decaf is becoming well-known and much loved for it's ability to taste almost identical to it's caffeinated counterpart.
