About

This coffee is collected from over 500 family-owned farms in the Dara woreda (district) of Ethiopia’s Sidama region; the community is close-knit, with coffee farming providing their main source of income and also holding cultural and social significance, a tradition passed down through generations.

Ripe cherries are picked and transported to nearby Mubaric washing station - this processing facility is meticulously organised by a dedicated team of locals to ensure exceptional coffees are produced. Financial support for farmers is also provided by the mills, offering premium prices when purchasing the coffee from the community of farmers.

The coffee is naturally processed, sun dried for 10-20 days until ideal moisture content is reached, which results in a sweet and fruity cup profile. Once dried, they are stored in a cool room for a few weeks, which helps to develop the flavour; once rested, the dried cherries are hulled to remove the dried skin and pulp.

The soil in the Sidama area is fertile, with an ideal climate for growing exceptional coffee.

The Varieties

The 74112 and 74110 varieties were both developed by Jimma Agricultural Research Center (JARC) which was established in 1967 and is responsible for developing many of Ethiopia’s outstanding coffee varieties. The centre also provides training for farmers, teaching them about correct cultivation methods. Both varieties this coffee is made up of were developed from trees in the Metu-Bishari forest in the Oromia region of Ethiopia. They are resistant to disease and have high yields, producing small cherries and leaves.
